Mango Blackberry Cobbler

This is the easiest and fastest cobbler recipe around. It can be made in 5 minutes, easily doubled and you can use any fruit you want.

1 stick butter
1 c. flour
1 c. sugar
1 tsp. baking powder
2/3 c. milk
2 1/2 c. fresh fruit of your choice, thawed, if frozen, and covered with an additional 1 cup of sugar
honey
fresh whipping cream or ice cream

Melt the butter in an 8" casserole (I do this in the microwave or preheated oven). Mix flour, sugar and baking powder in a bowl, stir in milk. Pour into the casserole over the butter. Pour the fruit and sugar mixture on top, drizzle with honey (I'm pretty generous with the honey). Bake at 325 for an hour. Serve warm with the cream or ice cream.

You can also use canned, drained fruit but I prefer the fresh or frozen. This is good with peaches, apricots, blackberry/apple mixture, cherries...you name it!
