Basa is back!

Los Alamos, NM(Zone 5a)

If you haven't tried the imported Vietnamese fish called basa, you owe it to yourself to try it. It is a catfish, but doesn't taste at all like American catfish, which I also like. Basa is grown in the Mekong river in cages and is quite inexpensive. For quite a while, due to trade battles and tarrifs basa became unavailable in the US. But it is back now. I first saw it in Asian Markets and a couple of days ago I found it in my local fish market. It comes frozen in fillets, just like catfish. I just roll the thawed filets in flour and pan fry them in olive or peanut oil. I swear my husband would eat them every day. I am sure you could use them in any recipe that requires white fish fillets.
Here in the middle of the US it is not easy to get good fish, but they seem to know how to fish this one kind.
