The very best Brownies

These are wonderful fudgy deeply flavored brownies. I took some to work this week, and had several requests for the recipe... so I thought I would share it here too. 3 people told me they were the best brownies they had ever eaten. They are SO easy!!

The recipe came from Cooking Light years and years ago. My changes and notes in parenthesis.

Chocolate Kahlua Brownies

1-1/2 cups sugar
1/2 cup egg substitute (I use 1 egg and whites to make 1/2 cup)
1/4 cup margarine, melted (I usually use butter - I rarely have margarine in the house)
3 tablespoons Kahlua - Coffee flavored liqueur
1-1/4 cups cake flour
1/2 cup unsweetened cocoa ( I like using Hershey's Special Dark Cocoa)
1 teaspoon baking powder
1/2 cup finely chopped toasted walnuts (optional - I don't use them - they are rich enough without nuts)
Vegetable cooking spray.

Combine first 4 ingredients well in large bowl.
Sift together cake flour, cocoa and baking powder.
Stir flour mixture into sugar mixture just until blended.
Stir in nuts. Spoon into 9-inch square baking pan coated with cooking spray.
( I use a good non-stick pan and skip the cooking spray)
Bake at 325 degrees for 30 minutes or until a wooden toothpick inserted
in center comes out clean. Let cool on a wire rack. Yield 16 servings.
(You want to make sure they are **just** done. I set the timer for a few minutes less to be
sure that I don't over bake them and start checking them every couple minutes so that I take
them out just when the toothpick comes out clean. My oven is older and not always consistent.)
