Crockpot Recipes

Springfield, OH(Zone 5b)

Over on ORVG we were talking about wanting some new crockpot recipes. I thought I would start a thread and see how other people use their crockpots. Tips. Great Recipes.. all are welcome and encouraged please!

One of the comfort foods I do in the crockpot is Chicken and Rice. I like to use the chicken tenderloins. They are smaller, cook better and you aren't stuck with a huge piece. Anyway..this is what I do

6 pieces Chicken tenderloin (amt varies depending on your family size)(my family size is 3)
1 can cream of mushroom soup
1 can 1% milk
1/2 can long grain white rice
salt and pepper to taste

Mix milk and soup together. (can preheat in microwave if desired but it not necessary)
Add rice and distribute evenly
Add chicken pieces (I like to sink them into the soup so they stay nice and moist)
cook on high for 3-4 hours or on low for 6-8 hours. Fluff rice with fork and mix to distribute remaining liquid well.
Your temps may vary so you might want to make this when you are home the first couple times so that you get a feel for how long your crockpot takes
This serves three of us with no leftovers.
I think if you have a large crockpot you could double this recipe with no problem..possible even triple but you would need to watch to see how it's doing.
