Ever tried a mexican eggroll?

I used to make my own oriental eggrolls. Then I decided to try to to modify them so that they would have a spanish flair. Not much different ingredients. Eggroll skins, a couple of pounds of lean hamburger meat, some chopped onion, green pepper, sauteed. Some garlic powder, ground cumin, chile powder, 8 ounces of sharp shredded cheddar, and a pint container of bean sprouts. Roll'em up and deep fry them. Can't offer a definitive recipe. I always just winged it.
Anybody else tried the same thing? I always just used a medium hot salsa as a dipping sauce. 3 dozen of them in a family of 3 disappeared within 24 hours.
