Lake Villa, IL(Zone 5a)

My Husband went hunting a few weeks ago and brought back a few birds. One of his buddies shared his favorite hunting spot with him, and because of his dissappointment with the hunt, he shared some of his "stored" birds with our family. This was a wonderful gift, but the birds are dated two years ago. Now they were in the deep freezer and in a block of ice in ziplock bags. I've already cooked the fresh birds, I'm now out of duck, and looking at the block of pheasants. I'm a little scared to thaw and cook them up for the family, being that they are two years old. Any suggestions? I related it to finding a mamoth in a glacier. Just because it was frozen all these years, I'm pretty sure I wouldn't want to grill me up some Mamoth burgers

oh, and fav recipe's would be wonderful. I crockpotted the first few birds, but that was "okay". Family liked it, I just think I can do better. Any ideas?
