That pre-grated cheese that you can get in the grocery stores now has corn starch added to it and, in addition, sometimes potato starch too. This is added to help keep the cheese from sticking to itself.
Because the starches are thickeners if you use this product in recipes where the cheese should be creamy, it comes out thick instead. I made the worst macaroni and cheese recently and I now know why it was so heavy and dry.
