I am guilty; we are not having turkey tomorrow. The family voted, and they want ham instead of turkey this year. I bought a precooked smoked ham from the store and have looked up some recipes for a brown sugar/honey/cinnamon glaze. Hopefully it won't go on my permanent record.

I'm going to miss the stuffing and gravy. We also make a bread sauce (British recipe) with turkey (my favorite).

I'm getting hungry just thinking about it

Happy Turkey Day to all whatever you eat! What good is Thanksgiving dinner w/o Turkey? It's just another day. We enjoy our one day a year w/turkey, stuffing in the bird and good ol' giblet gravy made w/ gizzards. broth and drippings! Our turkey is the star but there is so much on the table you don't have to eat it but they haven't invented a scent that smells like turkey and stuffing so we "suffer" along. May your Thanksgiving be wonderful and full of family and friends and pies.

Speaking of Turkey, you are right Ann, you just can't duplicate that wonderful scent, it is mouth watering.
By the way, do any of you make wonderful broth with the turkey carcass? I make a broth for soup that is to die for. It is kind of messy, but talk about wonderful smell!!!
Here is how I do it.
Save all your turkey bones, skin, and the entire carcass, including the little pieces ot meat that are left stuck to it.
Put it all in a great big stock pot, fill with water and add to it 1/3 cup of vinegar and 1 tablespoon of salt.
Boil for at least four hours, adding more water as nacessary. The vinegar extracts the calcium from the bones and the broth will turn white.
After cooling it down straing the broth and chill it, the fat will come to the top, and can be removed with a spoon.
The broth will gel, because it is full of calcium from the bones and proteins fron the ligaments and skin.
At this point you can use it to sip by itself after heating, or you can make wonderful soup with it.
This is the kind of broth, that you can't buy anywhere, and it is just an extra benefit of having turkey.

Frostweed, I always make Turkey Bone Soup using the bones and skin I find left on the plater, leftover gravy, leftover dressing. I add onion, celery, carrot - the mirepoire (however that's spelled(can pronounce it and know what it is) to all that. I just take the bones and skin out when it is thru simmering and zap it in the processor and we have dinner and lunches. We love that stuff - probably the best part of Thanksgiving and have it in the freezer long after the nothing else but the memories of the feast are gone. Hey, Brigidlily, sure I am. Hold your breath. Have a great Thanksgiving and enjoy that awful Green Bean Cassarole w/the soup in it. Yuk! DDH is on a constant low carb diet and if I never see another green bean it will be tooo sooooon. Canned soup-double yuk! If I ever get too old to make my own soup then I will never eat soup again. When we lived in France in "73 we were invited to Thanksgiving dinner at another American's home and it was so wonderful. The stuffing was something weird, tho, but it had the right spices in it so it smelled good. They had the turkey and cranberry sauce (canned) and poultry seasoning flown from the States for the feast. Another time we were on a cruise over TG and they served their version of turkey & and it was so BAAAAAAAAd. They put chestnuts, cranberries an oysters in w/dry bread or some such and it truly was inedible. Turns out they thought the stuffing was just for seasoning and didn't realize that Americans actually ate it. It was an Italian line. We've learned there's no place like home at Thanksgiving. I don't even trust my daughters to fix turkey and stuffing. They haven't learned that you have to taste stuff to make sure it is good before setting it before people. My grandkids love to come here for that meal.

Happy Thanksgiving everybody! Yes, I'm doing the green bean casserole too. My sons would declare a mutiny if it wasn't there. I made a pumpkin roll for the first time. Oh my, it's dangerous! I put it in the freezer to hold until tomorrow but keep taking it out and cutting myself a tiny slice. Hope there's some left for my guests!
Your Sumac is gorgeous Josephine! I love Texas, but I sure do miss all the beautiful trees changing colors up north.
I too will do the turkey broth. Every once in a while we will get one of those roasted chickens at W-M. Those carcasses make great broth too.

According to my nephew, I make THE green beans with sun dried tomatoes and basil, but Mom has volunteered this year to do the green beans, and whatever she comes up with will be great. I am sure it will involve soup and canned fried onions. I made the blueberry grape congealed salad, pecan pies, and pickled onions. The onions are from our garden, look a little pink now due to the red wine vinegar, and probably won't be touched! lol We are headed to Round Rock in the morning as my sister is hosting the crowd this time.

I hope all of you have a very Happy Thanksgiving! My California son and his DW and my older nephew and his family will not be there, but we will enjoy the rest of the family. We have so very much to be thankful for this year.

Going to my sister's for Thankgiving, have no idea what we will have, but know it will be good. Best part is, I didn't have to cook!! I did make 30 choclate cupcakes this morning, in honor of my DH's birthday. But my little great nephew gets excited when he gets cupcakes too!!! LOL! DH's bithday isn't until Monday, so he will get a cake with me then.

This year we are going to my sister-in-law's house, so i will not be cooking much.
I usually make a brown rice stuffing that is deledious, and bake it separate from the turkey, that way it doesn't get mushy.
It is nice to not have to set up for dinner, which this year will be at 6.00 p.m. to accomodate both sides of the families. It is a beautiful day, so we will be raking leaves and having fun untill maybe 2.00 then i have to get my food ready to take.

We're having 3 kinds of stuffing, 1 bird, and about a dozen sides plus egg nog w/lots of nog in it. We will only have 15 people here including us since 2 of our kids can't join us for the day. But that's ok as we had one in last weekend from San Antonio and both she and her roommate have to work tomorrow and the other "child" will be here tomorrow w/2 grandkids and he wants the leftover egg nog. He works for the Harris County DA's office and crime marches on regardless of the day.Even if it were just the two of us we would have essentially the same menu because it is Turkey Day! A Happy one to all you DGers and may your turkey have at least 4 legs and 5 sets of white meat so everyone will get what he or she desires. Good eating!

Happy Thanksgiving to all my new Texas friends. We're home today...and "alone," as our DD and family had to go to his family's for the weekend due to illness. We were supposed to go to the MS Gulf Coast, but are staying put. Will go there in spring.
Thought I'd keep it simple and have beef tenderloin instead of a big turkey for the two of us. Also bought a roasted chicken for sandwiches this evening. Instead....this morning, I got up and began preparing all the side dishes that I'd fix with turkey. Substituted the chicken, set table with china and silver and we had a very nice, quiet, delicious Thanksgiving meal. I just couldn't let go of the tradition! What surprised me was that I usually start preparing things the day before and am still working right up until the turkey is done around 2. This morning, I had everything ready to serve with only three hours prep.
Going to finish planting all the bulbs I bought at Lowe's...hope it's not too late....then it's nap time! And to neighbors for pie later.....
Hope to try Frostweed's leftovers turkey soup/broth one of these days. Sounds delicious!

Well I missed this thread too! probaly a good thing, all this good food you guys are talking about ... and Pat you could feed me anytime ... blueberry grape congealed salad??? Do I need the receipe for this too? lol
I stayed home ... a friend came over and put the turkey in the over for me ... which a friend and I ate yesterday.
Thursday was a blessed day for me though just to stay home and not have go to work.. ...being home forces me move around more rather than sit at a desk all day and get stiff. I even forgot the cane a couple of times. :)

Yes, Sylvia, you need the recipe for the blueberry grape salad. It's so easy and could work for dessert too. I'll d-mail it to you, and I'll be happy to cook for you when you come to see me! We ate too much and were "forced" to bring home leftovers today. My younger son and his wife came back this far with us this evening and will return to Lubbock tomorrow. It was good to see much of the family, and we are very thankful for all of them. I hope everyone had a good holiday.

Josephine, I always make stock out of my turkey remains, too, but I've never put vinegar in it.. I copied down your directions for next time. Thank you for posting them! :-) I "do" a turkey every couple of months cuz they're cheap, yummy, easy to stretch over several days' menus, and I love having stock on hand for soups and things.

We normally go up to the Woodlands to my SIL's house for Thanksgiving, but this year we've all been fighting colds so we stayed home and had lasagna instead. It was peaceful and cozy... We have a lot to be thankful for. :-)

Good to hear from you Marylyn, I am glad to hear about many people taking advantage of all the turkey parts.
You can't taste the vinegar when you are done, but it makes a big difference in the calcium content of the broth.
Lord knows we can use all the calcium we can get, especially old ladies like me.

Jo I know what you mean about calcium and I have a lot of bone losage. btw I do the stock thing too and the drippins from the pan but I Never heard of the vinegar thing.... I guess boiling it for four hours would rinder Alton Brown on food network was explaining how the bones is what make the gel. hhmmm interesting I got to try that.
