Maquechou

(pronounced:mach-shoe) this is a cajun dish that we love during fresh corn season.

8 ears of corn
1 can of lima beans or 1 cup cooked fresh limas
2 tablespoons cooking oil
1 teaspoon salt
1/2cup water
1/2 lg. bell pepper
1 stalk celery (small)
1/2 onion
1 toe garlic
red and black pepper to taste
1/2 cup milk

saute veggies in oil until tender. Shave off tops of kernels with sharp knife, then scrape the milky substance. Place everything in a heavy skillet, except for the 1/2 cup of milk. Cook on low for for about 20 minutes, stirring often. Add milk and cook for 10 more minutes.
