Either one of us has diabetes, but this is a great recipe if you like curry. I fixed it today, put it on top of salad greens surrounded with some grapes. Really Good!
3 tbsp. chopped prepared mango chutney
2 tbsp. low-fat yogurt
2 tbsp. low-fat sour cream
1 tsp. curry powder
2 cups diced cooked chicken
large tart apple, peeled, cored, and diced
1/2 cup shredded carrot
Combine chutney, yogurt, sour cream, and curry powder in a medium bowl.
Add the chicken, apple, and carot, mix well.
Cover and chill at least an hour before serving for flavors to blend.
You can serve this over salad greens or fill whole-wheat pita pockets for a delicious sandwich.
