Edible water plants?

I work on a school pond. Next year, we plan on putting in an edible section in the pond. We have watercress that comes back every year. I'm planning on purchasing some water chestnuts. I was hoping maybe someone had some edible plants I could trade for.

The only thing I can think of offhand is the common cattail. If you grasp the centermost leaves and pull up there will be a white area which is the bottom part of the leaves. It is kind of slimy like okra but is similar in taste to fresh cucumber.

We've got cattails. I've heard stories of how settlers would use the fluffy top part in a flour batter mix. Also, how you could eat the that top part like corn on the cob.
