We went a bit overboard at the local orchard... and have several bags of fresh apples on hand - and there are just two of us! Myself and my elderly Mom! She can't eat them fresh out of hand to well because of dentures, so I'm looking for ways to use these apples !!
By the way, the reason we have so many? The orchard we normally go to has permanently closed, and we went to an orchard we have not been to before. Well, Mom wanted a bag of MacIntosh...and when we arrived, the orchard had boxes of the different varieties of apples they carry there for you to sample. At the urging of the sales lady, we tried several kinds. I was overwhelmed by how good the Pinova apples were. So, I bought a peck bag, in addition to the MacIntosh. We tried the Pinovas "stewed" and "baked" which are two ways my Mom prepares fresh apples. They were excellent both ways. They are a very crisp, tart but sweet and juicy apple. They did not "cook up", they kept their shape after cooking. So, I went back a couple days later, and bought two more pecks, after reading up on Pinova apples online and reading that they keep very well, and flavor improves after storing.
I made my favorite apple dip to eat with them - YUM! - take a box of instant butterscotch pudding mix, measure out half the powder and save the rest for another batch later. Make it up according to directions (using half the milk).... then when it's ready, mix in a bit of Cool-Whip to make it light and fluffy. I only make half the box up at a time, because I am the only one eating it.... if I make the entire box, it will be watery in the bottom before I eat it all - well, I could easily eat the entire thing in one sitting, but know I shouldn't LOL... I'd say I use about half the volume of Cool-Whip to pudding, maybe a bit more. Keeps for about 2-3 days before it gets ugly. :-0 This is good for bananas too. Probably other fruits as well, but that is all I have used it for. I don't have a real recipe - just something I made up one day with a friend.
So.... any uses at all for fresh apples..... ???? I would prefer things that are not terribly high calorie - I have lost 30 lbs in the last 6 months, don't want to gain them ALL back.... LOL.... That's why we like baked apples, all the goodness of apple pie, without the crust! I figure it must be at least half the calories that way ;-) I'm game for apple salads, main coarses, apple butter, I don't know, that's why I am asking!
If you see Pinova apples in the orchard this fall, I'd recommend them!
