When I was in New Zealand, my hostess served this every afternoon with tea. EASY, HEALTHY and FAST and DEEELISH!!
ANNA’S FRUIT CAKE – NO Butter/Sugar/Eggs/Milk
2.2lb (1kg) mixed dried fruit – soaked overnight in 2 C orange juice
add nuts and some fresh ginger - (optional)- whatever you like
mix in 2 C flour (whole wheat OK) and 1 T baking powder
add a splash of rum or brandy (optional) or orange juice – to make batter smooth not runny.
Bake in a medium oven – about 200/250 deg. For an hour in 2 non stick loaf pans.
Anna keeps this wrapped in foil in the fridge for months....
