Interesting and yummy soup

Jacksonville, FL(Zone 9a)

I get a newsletter from the Mast General Store in NC; it is an old timey place and their newsletter often has recipes. This was in the October issue and it sounds strange but is delicious. Even my DH, who would gag right out loud if he knew there was pumpkin in it, loved this soup. I added chopped toasted walnuts to the garnish.

Pumpkin-Tomato Bisque
2 teaspoons – 2 tablespoons mild vegetable oil or butter
Cooking spray (optional)
1 medium onion, chopped
2 cups vegetable bouillon
1 15 oz. can pumpkin puree
1 14.5 oz. can whole tomatoes, chopped medium fine
1 tablespoon maple syrup
Salt and freshly ground pepper to taste
Minced Italian parsley

Heat oil or butter over medium heat in a small skillet (or heat the skillet sprayed with cooking spray). Add onion and sauté until softened – about five minutes.

In a large pot, add the vegetable bouillon and heat through. Whisk in the pumpkin and heat again. Add tomatoes and maple syrup. Season to taste with salt and pepper. Serve hot garnished with parsley.
