i was reading a magazine in the dr.'s office and it had an article about two college graduates who opened up a resturant that only sells deserts and called it "finale". they believed that dinners in resturants would be interested in having dinner in one place and dessert at another. apparently it has worked in boston where baseball players go there on their way home from games and order take out. several actors sit in side and enjoy their treats which average about 17.00 dollars each. this recipe is for double chocolate cookies which i have not tried yet. the pastry chef says that once you make these cookies you will never make brownies again.
6 eggs
2 1/2 cups granulated sugar
1 tbl vanilla
6 ounces bittersweet cocolate
17 ounces semi-sweet chocolate
1 cup unsalted butter
1 cup all purpose flour
1/2 tsp baking powder
3/4 tsp salt
melt chocolate and butter together in a double boiler until blended. in a separate bowl, whip eggs, sugar, and vanilla until thick and light. in another bowl, sift all dry ingredients together. slowly add chocolate mixture to egg mixture on low speed. fold in flour mixture slowly. the cookie batter will be liquid. allow to sit for three hours at room temperature.
scoop heaping tablespoons onto cookie sheet that has been light sprayed with a non stick spray, at least 3 inches apart. bake on a double cookie sheet (one sheet inside another)at 350 degrees for 10 to 15 minutes or until the center of the cookie is firm to the touch..
IMPORTANT -- these cookies DO NOT keep well. they should be eaten right after baking but not later than 24 hours after baking.
