Bulb onions (not scallions) grown in containers?

Houston, TX(Zone 9a)

My veggie gardening is limited to containers & EBs right now - as I live in a piney wooded neighborhood and don't have a good "stretch" of full-sun yard space to devote to an in ground bed. I have two EBs growing hot peppers right now, that I didn't transplant until early Aug., and I'm just now getting to harvest some fruit from them. I'm planning on buying at least one more EB, but I also have a few large containers that I'd like to use as well (if possible). Here's what I want to grow this fall/winter:

• Broccoli (from seed) / Spinach (from seed - 'Oriental Giant') / White Onions (hoping for med. to large bulbs, but wouldn't mind growing a few for scallions - bought sets from a local nursery)

Here's what I'm working with (to plant in):
• one newly bought EB
• 2 18" plastic planters (round pots, not square or troughs)
• 3 12" clay pots
• 4 large plastic kitty litter "buckets" (educated guess, they hold about 5 gallons) that I could drill holes in & convert into a planter
• a gazillion 1 gal. plastic nursery pots, though I imagine those are too small...

I *could* clear out one of my pepper growing EBs, since (so far) they haven't been producing too abundantly, and it is the 3rd week in September... Of course, the weather typically stays fairly warm here in Houston well into "fall."

Does anyone have advice on which of those crops would be best suited to the EB, versus what would still preform well in any of those containers that I listed? I kind of like the idea of planting spinach in the EB, since you can fit so many plants into it (16, according to their instructions)... How many onion sets could I plant into one of those 18" pots to grow good sized bulbs? Are the 12" pots too small?
