I live in central Arkansas and would like to plant some apple, apricot,pear and fig trees. Should these be fall planted or spring? Anyone know a good source?

Most of the major orchard tree suppliers only have bareroot stock available in late winter/early spring, so in most cases, that's what you're limited to. If it's a nursery growing containerized plants, then you could do it any time - and fall would be great for you.

If you're going to plant an apricot, I'll recommend that you try Tomcot - and even then, don't set your hopes too high - the likelihood that you'll ever get any fruit is pretty slim - our up & down winter temperaturess(and yours, as well) will, in most years, induce your apricot to come out of dormancy and bloom in Feb or March - and its blooms will get nuked by frost.
