...What should I be treating my collards with to prevent any pests from eating them up?
Liquid Sevin is the only thing I have now, but one of my church members warned about some moth that lays an egg that turns into a larva that is not affected by Sevin. Anything to that?
This is my first year growing collards.
Mine are 2 1/2 weeks old, looking pretty good so far, and I want them to stay that way.

Quick collard question...
Kent, the major problem that I have on collards and other brassicas is the cabbage worm, the larva of a white butterfly. Bt (brand names Dipel or Thuricide) is the most effective control. http://www.urbanext.uiuc.edu/bugreview/cabbageworm.html It is also effective on cabbage looper ( a moth larva) and the Diamond Back moth larva.
http://www.ext.colostate.edu/PUBS/INSECT/05556.html Your church members are correct, Sevin (Carbaryl) targets beetles, It is not very effective on many other insects.
