My sis-in-law taught me this...some may already use this method.
Since those store bought 'maters have such a tough skin, I like to peel mine for my sandwich.
Take a spoon and run the tip (pressing lightly against the skin)...and go from top to the bottome ...do this all the way around the tomato...then you can prick the skin and just peel the skin, with out loosing all that good stuff just under the skin. Hope it works for you. Jo
