"Impossible" recipes

I was recently sorting pie recipes. I am putting all of my recipes into little photo albums with 100 pages, and devoting 1 (or more) albums to a topic, such as Pie.

I found this old Impossible Buttermilk Pie recipe. When I asked my mom about it, she said years ago there were all kinds of "Impossible" recipes out there. I had never heard of them.

Can't figure out if it is called impossible because it is so impossibly simple, or that it is impossible to just eat one piece. Or, that it is impossible to not eat it all while it is warm, and have any left over for serving cold.

Impossible Buttermilk Pie

1 cup buttermilk
1/2 cup Jiffy or Bisquick
1 tsp vanilla
1 1/2 cups sugar
1/3 cup melted butter
3 eggs

Wisk together, will still have lumps, but that is fine. Pour into greased 9 inch pie pan. Bake 30 - 35 minutes at 350 until knife inserted in middle comes out clean. Cool 5 minutes, serve with fresh fruit or ice cream, or both. Really refreshing to put fresh fruit on and serve cold. (can't seem to keep ours around long enough for that though)
