Pumpkin Marmalade
8 cups pumpkin, shredded
4 c sugar
1 can frozen concentrate Orange Juice
1/2 c lemon juice
5 oranges, washed scrubbed cut in 1/2 and sliced VERY thin
place all together in a large bowl , let sit for at least 2 hours , overnight is fine
put in large pot and cook till pumpkin is clear , about 20-30 minutes
put into hot jars and can in hot water bath for 15 minutes for pints 25 minutes for quarts
Carve pumpkins the night before halloween , the parts cut out get shredded, and mix this all together that night. Cook it the next night when you come home from trick or treats, its awesome over ice cream!
