Wow! That is a lovely crop of eggplant! Not bad for living in the high desert! I have eggplant too, but just about 2 or 3 inches long. Casper seems to be the most advanced. That is the difference that cool vs. hot weather can make.
Sequee, they are Thai green long, Japanese long, Rosa Bianca, and Farmer's Long.
Did any of yours make it?
Jenhillphoto, i just fried them up with some garlic, the hot pepper and a bit of squash. It was really good, except one of them was a bit bitter and every few bites you would taste that one... Wish i knew which variety it was, i have my suspicions...

I did not have very good luck with germination on the EP's. Then I finally got some to take and they were attacked by major buggies, etc. I was sure I would have none! I'm please to report, though, that my Violette de Firenze is going crazy, and several others are large, healthy and flowering. 2 of the others are Black Beauty, and the other is either beatrice of Nadia (Burpee's gourmet mix!). None of the exotics made it past the bug attacks. I'm ok with that, though. When it comes right down to it, if I'm only going to get a few, I'd want them to be the traditional purples. the others are fun to play with, but I NEED the big'uns for my Stackers!

I've only grown the Black Beauty, and if it isn't covered with Ree-may at the beginning, the flea beetles riddle it!
I'll be interested in seeing you decide which are keepers and how you used most of them. I do an eggplant casserole with hamburger and parmesan cheese that is really good. Otherwise, I love it floured and fried!
No, but Thai dishes specialize in bitter eggplant. http://www.chiataigroup.com/th/home/ Their English version seems to down at the moment, But if you want to see what is available in Thai eggplant, this is a good place to start.
