My neighbor told me about her recipe and I came home and wrote down what I could remember. Does anyone think I missed anything?
12 cups sliced cucumbers
1 med. green pepper diced
4 stalks celery diced
1 med. onion diced
4 Tblsp. salt
2 cups vinegar (white)
3 cups sugar
Place the vegetables in a large bowl and add salt. Let set 4 hours. Squeeze out the moisture. Boil the vinegar and sugar 5 minutes to make a syrup. Cool. Put the cuke mix in freezer containers, leaving plenty of headspace! Pour the syrup over evenly and freeze.
My neighbor brought me the recipe and I did have the sugar and vinegar wrong.
The recipe is corrected now.
