"Homesteader Honey"

(Zone 3b)

I started making this in 1979. The recipe is a compilation from the Extension Service here in Alaska, and others' recipes. It's very good and is as close to bee's honey as I've found. Fireweed is beginning to bloom, so it's time to get busy and make some.

10 cups sugar
1 tsp. alum
2 1/2 cups water
18 fireweed blossoms
48 clover blossoms (30 white; 18 red ); (18 wild rose petals, optional)..
Slowly boil sugar, alum and water 10 minutes. Remove from stove and add blossoms. Let steep for 5 minutes. Strain. Pour into jars. Makes about 5 pints.
