herbs for tea.. better fresh or dried?

The herb tea I have been making from fresh herbs from the garden is weak compared to dry herb tea pakcets i get from the store... I dont think the herbs from my garden are lacking in power at all so Im wondering are herbal teas best brewed with dried herbs ? or do I just need to steep more fresh herbs ?

The general rule of thumb is to use 3 times as much fresh minced herb as you would use of the dried. So, if a recipe calls for 1 tsp. of dry oregano, you use 1 Tbsp. of minced fresh oregano. I imagine the same thing applies to herbal tea. Try using 3 times the quantity and let me know! Also, be sure you are chopping or at least bruising the herb leaves before you steep them.

I would LOVE some herbal tea right about now. Too bad I dont grow any herbs suitable for teas, only have things like dill, basil, chives, cilantro and a few others I cant think of right now cause Im sleeeeeeeeepy.

IVe got chocolate mint that is taking off .. chammomile ... peppermint .. spearmint.. and Anise hysop that are all going crazy right now.

Does any one know another use for Anise hysop other than tea ?

katym, if you're sleeeepy you don't need herb tea. ;)

I've been having extraordinary luck with stevia. I haven't used it in tea yet, but when the weather is just a hair more autumnal I plan to. If my 4 yoa granddaughter will stop eating it! Hmmm... maybe I could stick a bruised leaf into the iced tea maker along with the bags... or my incredible fresh spearmint! That would be tasty.

Just purchased some chocolate mint from ebay and havent received it yet. I will have to try it in some tea once it gets growing good and see what I think.

I have some chocolate mint going. I didn't really think it would smell like a peppermint pattie, but it does. I love it!

I have some apple mint if anyone would like to trade for some chamomile . :-)
