Landscaping around dog kennels

Spring City, TN(Zone 7b)

Bulldozers have leveled my back yard for dog kennels -- yeah! Now it's gravel and red clay and somewhat level, aside from allowing for drainage! The chainlink kennels are a fact of life, if unattractive. I'm building so that most of the landscaping will be INSIDE the exercise area but only one fence away from the kenneling area (where they will spend most of their time). Plants must be dog-friendly, or at least not harmful.

I've got distinctly separate areas to plant:

1) Steep, red-clay terraced slope with full sun after 11am -- ??? herbs that will be fragrant and help with erosion??

2) Strip of woods in shade until 4pm -- ??? flowering shrubs/small trees or interestingly colored foliage, stems, etc.

3) raised planters around the perimeter of the kennels to soften the look of chainlink, and perhaps provide shade in years to come. ??? I like flowers and fragrance and foliage -- but this will be in full baking sun after 10am. Also interested in something climbing to help with shade.
