How about this one...

Horehound candy

11/4 cups water
2 cups fresh horehound leaves or l cup dried
4 cups packed brown sugar
1/4 cup light corn syrup

Put the water in pan and bring to boil. Reduce heat, add horehound. Cover and simmer for 15 minutes.
Remove from heat and let steep for 1 hour. Strain and discard horehound. Add sugar and corn syrup to liquid. Boil to hard-crack stage or 300 degrees on candy thermometer.
Pour this syrup in a buttered 12 x 8 inch pan. When candy begins to set, mark into squares with the tip of a sharp knife. Cut or break into pieces when cold. Can be dusted with powdered sugar.

Mom served horehound candy to sooth sore throats or ruffled feelings. Can be used with anise or mint or lemon balm.

This one is tasty... more of a coffee cake than bread.
Lemon Thyme Bread with Lemon Glaze
Yield: 1 loaf
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1/8 teaspoon ground nutmeg
3/4 cup skim milk
1 tablespoon chopped fresh lemon balm
1 tablespoon chopped fresh lemon thyme
1/2 cup butter, softened
1 cup sugar
2 eggs
1 tablespoon fresh lemon zest
Preheat oven to 325 degrees. Mix together flour, baking powder, and nutmeg. In a saucepan, combine milk, lemon balm, and lemon thyme. Bring to a boil, then remove from heat. Let stand, covered, until cool.
In a separate bowl, beat butter until creamy. Add sugar gradually, beating constantly until light and fluffy. Add eggs, one at a time, beating well after each. Add flour mixture alternately with milk mixture, beginning and ending with the flour. Stir in lemon zest. Pour into a greased and floured 5x9-inch loaf pan.
Bake 50 minutes or until a toothpick inserted near the center comes out clean. Cool in the pan 10 minutes. If glaze is desired, pour half of the glaze over the top of the cake before removing to a wire rack to cool completely. Finish with the rest of the glaze.

Lemon Glaze

1/2 cup confectioners' sugar
2 tablespoons lemon juice
Stir together sugar and lemon juice until mixture is smooth.

Lemon Thyme Cookies

1/4 Pound butter
3/4 Cup sugar
1 Whole egg, beaten
1/2 Teaspoon vanilla
1 Tablespoon milk or cream 1 Teaspoon grated lemon zest
1/2 Cup fresh lemon thyme leaves, finely chopped
1 1/4 Cups flour
1/8 Teaspoon salt
1/4 Teaspoon baking powder
Preheat oven to 350F. Cream butter, gradually adding sugar, and beat until light. Add egg, vanilla, and milk and blend thoroughly. Blend in lemon zest and thyme. Mix flour, salt, and baking powder and sift into butter mixture. Blend well. Arrange by teaspoons on greased cookie sheet and bake 8-12 minutes, until lightly brown. Yield: 3 dozen .

and a refreshing lemon drink...

1/4 cup lightly packed lemon verbena or lemon balm
1 lemon ( wedged and seeded )
6 cups water
ice
sugar or sweetener
lemon slices, lemon verbena or lemon balm leaves

Rinse herbs ( with stems ) and place in 2 quart pitcher. Pre leaves with a spoon to bruise leaves. Add lemon wedges. Stir in water. Cover and refrigerate for 2 to 6 hours. Remove and strain herbs and lemon. Serve with ice. Sweeten to taste using sugar, artificial sweetener or the following recipe for Simple Syrup. Garnish with lemon slices and herbs.

Simple Syrup:
In a small sauce pan, combine l cup water and l cup sugar. Bring to boil over medium heat. Stir till sugar dissolves. Read when completely clear and the surface is covered with bubbles. Remove from heat and cool. Store in covered glass or jar in refrigerator. Will keep 2 weeks.

This recipe came from Countyr Gardens magazine. Not my idea but enjoyable...
