There are a lot of healthy weeds that I allow in my garden - lambs quarters is especially good as a cooked green similar to spinach and very mild. The small early leaves of dock have a lemony taste that I crave - love to snack on them as I visit my garden. Purslane is similar and both are good in salads. I am consciously planting some things that will reseed year after year, so that healthy eating is easier. This is what I have so far: lettuce, red orach spinach, arugula, dill, kale.
Anyone have any more suggestions for reseeding healthy things?
