Spring Breakfast

During the spring asparagus season I chop a bunch of asparagus some garlic and a low-fat sausage. Usually Hillshire Turkey sausage. I fry this until the asparagus begins to brown around the edges and then scramble eggs over it.

This year there was horrendous rains in the asparagus growing regions of California so I was able to have that treat only a couple of times. However I have a nearly spineless cactus growing in my yard. So I substitute young cactus paddles for the asparagus. I hold the paddles over a gas flame and burn off any spines then chop the cactus. Nearly as good as asparagus. The garlic is optional and I often add some cheese.
