Gratin Potatoes

Pioneer, CA

I found this recipe in one of my cook books, made it tonight and it is really good. Not exactly low calorie, but very tasty.

Gratin Savoyard

2 # Yukon gold, White Rose, or russet potatoes ( I used Yokon Gold, great texture for this recipe)
1 1/2 teas. salt
Freshly ground pepper
2 cups grated Gruyere Cheese
4 tbs unsalted butter
1 cup chicken stock

Preheat the oven to 425 degrees. Butter a 2 qt. baking dish 14 by 8 by 2 in.

Overlap 1/3 of the potato slices in 1 layer in the dish. Sprinkle with 1/2 tsp. salt, pepper, and 1 /3 of the cheese;dot with shavings of butter. Repeat with 2 more layers of potatoes, cheese, butter and seasonings.Pour the chicken stock over the potatoes.
Bake in the middle of the oven for 1/2 hr. Lower the temp. to 350 and tilt the pan to baste the top layer of the potatoes with the stock in the pan. Bake for 1/2 hour more, or until golden brown.
