As promised, here (finally) is the recipe...Hope you enjoy it as much as we do.....
1 1/2 to 2 lbs boneless pork chops, diced into bite size cubes
Olive Oil
2 - 4 diced garlic cloves ( to taste)
1 Large White Onion, diced (not minced!)
About 8 to 10 tomatillos quartered
2 large red potatoes diced in nice size bites (peeling optional)
Variety of "roasted" diced chili peppers (Serrano, Italian Roasters, Jalapeno, Anaheim, really whichever combination you prefer.....4 to 6 total
1/2 teaspoon cumin
kosher salt & black pepper to taste
3 cups chicken broth ( I buy a case of canned at costco, it's very convenient)
Brown the pork in the olive oil, remove, brown garlic and onions, remove...
Deglaze drippings and put meat, onions, garlic, chilis and all ingredients except potato in a dutch oven or deep cast iron skillet, cook on med low heat for 2-3 hours til meat is exquisitly tender, add diced potato and cook additional 15 to 20 minutes til just tender. Yummmmm.
PLEASE take the time to flame roast your chilis, there just is no comparison........Enjoy
