I cannot swear to this, but birdlady_liz told me that when the leaves get too much sun, they curl to protect themselves. Some of my newly planted gingers did this initially, and I even lost a few leaves. But the new leaves seem to have adjusted to the sun. Karen

Yes, they do that to protect themselves from the sun. If you'll notice first thing in the morning (or late in the evening) that it's not doing it. I've got one that I may have to move or plant something "over" it to get it more shade.
Especially being variegated, your ginger may need less sun. Mine grow where they have sun 2-3 hours a day...the rest of the time it is filtered.
GloriaBello.....Yep, that's a definite sign of heat....mine look the same. It's been very dry here in Florida too, so my gingers look identical. I have been trying to water them heavily in the early AM, so they can take it up through the roots and into the leaves before the midday sun. The good news is, they are extremely resilient gingers, and should have no long term ill effects from it, if you stay on top of the situation.
Mine if kept slightly moist all the time never curl, but when they get dry they curl quickly.Mine are in full sun year round
