We've tried a couple of new things here in the past few weeks, so I thought I'd share with ya'll.
The first, my daughter made in Home Ec. It is sooooo good! I would have never added strawberries to spinach, but it's fantastic.
Bag of spinach washed (and torn if desired)
quart of Strawberries washed and sliced
small red onion, sliced thin
small bag of sliced Almonds
Poppyseed Dressing (we used Kraft)
Wash the spinach & Drain, Wash and slice strawberries and onion.
In serving bowl toss the spinach and strawberries, onion and almonds onion together, reserving enough strawberries and onion for garnish
Put in serving bowls and garnish with extra strawberries and onions, drizzle the poppyseed dressing over all.
We went to my sisters for Easter Dinner, she had no deserts, and wanted me to make something "springy" I stood in the pantry looking at what I had, and decided to make something I'd never even made before, it turned out GREAT!
1 Orange Cake Mix Prepared as directed
1 large can mandarin oranges, drained
1 16oz can crushed pineapple, drained, then drained again. :-)
1 box instant vanilla pudding, mixed as directed minus 1/4 cup of the milk
1 large container cool whip
small can mandarin oranges for garnish
Bake the cake as directed, in two rounds or one 9x13 pan. COOL
Mix the pudding, and when it's done, fold in the mandarin oranges and pineapple and chill
After the cake is cooled, if you do layers, place half of the pudding/fruit mixture between the layers and half on top. If you do a 9x13, spread the pudding over the top. Spread cool whip over the top and garnish with mandarin oranges.
SUPER easy, really good, and it screams SPRING! :-)
