My miniature orchard arrived - 2 semi drawf apples, a drawf peach and a drawf nectarine. I had them pre-pruned by the grower. The instructions say that they very rarely need staking when planting as they are short and don't have long, wind catching branches. They are about 3 ft tall. We pretty commonly get winds in the 20-35 MPH range and at least once a week, in the 35-45 MPH range. With the weather transitioning to Spring, we are also getting "gusty winds up to 55 MPH". These four little trees will be planted 100 ft from anything that might slow down the wind at all.

Staking Question for New Fruit Trees
My experience with semi-dwarf apple and dwarf peach trees has been good. Dwarf apples would need bracing for sure.
In your drier climate I suspect you might be alright as far as blowing over is concerned. I did have a full size apple tree that kept leaning east on me while it was smallish.
