Rhubarb Custard pPie

Pioneer, CA

Yesterday I went out to my garden to see how much is surviving this rain (supposed to get more snow tonight) and discovered my rhubarb is starting to grow. Put me in the mood for rhubarb pie, so thought I'd post a recipe for a rhubarb custard pie that is so good.
For a 9" pie:
Beat slightly, 3 eggs:add 2 2/3 Tbsp. milk.
Mix and stir in:
2 cups sugar
4 tbsp. flour
3/4 tsp. nutmeg
4 cups rhubarb, sliced
Pour into bottom crust, dot with butter. Cover with top crust
Bake at 400degrees for 50 to 60 min.
