This is a little time consuming, but worth it, great served along with other veggies and deviled eggs.
BLT Bites
16-20 Cherry Tomatoes
1# bacon, cooked crisp and crumbled
1/2 cup mayo
1/3 cup chopped green onions
3 Tbsp. parmesan cheese
2 Tbsp. snipped Italian flat leaf parsley
Cut a thin slice off of each tomato top. Scoop out and discard pulp (a small melon baller works great)Invert tomatoes on a paper towel to drain. In a small bowl combine all ingredients, mix well. Spoon into tomatoes, refridgerate for about an hour, sprinkle with paprika, serve.
