This is very good and has no bread and very little starch in it. Taste and consistency are very close to bread pudding.
2 cups cooked (microwaved) acorn squash, mashed
1 cup Splenda
3 eggs or egg replacement equivalent to 3 eggs
1/2 cup raisens
1/2 cup chopped pecans
1 chopped apple, including peel
1 12 oz. can evaporated milk
1 Tbsp. cinnamon
1 Tbsp. vanilla
Mix all ingredients together well. Pour into a 9 inch square cake pan which has been sprayed with Pam. Bake at 350 until brown and set in the center.
