President Kennedy's Favorite Irish Bread

Harford County, MD(Zone 6b)

I don't remember where I got this recipe, but I made it today and we thought it was very good.

2 cups flour
3 tsp. baking powder
1/2 tsp. salt
1 cup sugar
1 cup raisins
1 stick butter
3/4 cup milk
1 whole egg plus 1 egg yolk

Mix flour, salt and baking powder. Cut in butter till it is pea size.

Stir in sugar and raisins.

In another bowl, beat eggs and milk, then add to flour mixture. Stir well, but do not beat.

Pour into a well buttered loaf pan and bake in a preheated 350 degree oven about an hour or till a pick comes out clean.

I didn't use a loaf pan but did mine in an iron skillet sprayed with Pam. I turned it out immediately like I do cornbread and as you can see, the side kinda smashed. Should have let cool at least 5 or 10 minutes before doing that.

It tastes more like cake than bread.
