Almost everything is coming up in my garden, hundreds of perennials, due to the crazy long stretch of warm weather. What will a cold snap of a few days of 20 degree temps do to most of them? Should I cover anything specific (ie anemones, nepata, beebalm)? Just want to prepare myself for the casualties! I have no idea what to expect.

No, they'll be fine! That's why they are perennials NOT annuals. It's not going to be a hard freeze. It's just a brief cold snap and the temps will warm up once again.
I agree. I don't plan to do anything to protect my perennials. A cold snap might zap some foliage, but the plants will be just fine. I am a little worried about losing all the flower buds on my Saucer Magnolia. That happened one other year and it is such a shame to miss out on such a beautify display. ;-(
