Another good casserole for cold weather (and warm). Kids love the corn chips! Men love this casserole.
Cornchilada Casserole
1# ground beef, browned, with beau monde seasoning added
1 can chile beans without any beef
1 can diced tomatoes
Mix the above together
Sautee chopped celery and chopped onion. I don't know how much - maybe one small to mediuim onion and 3 large celery stalks. Add this to the above mixture. Sometimes I don't have celery on hand and use celery salt instead.
Layer in a casserole dish:
The above meat mixture
Cut up or grated velveeta cheese
a layer of corn chips
Repeat the layers, end with corn chips.
Bake at about 350 degrees til heated thru and the cheese is melted.
The orig recipe calls to grate the cheese. It is way too hard to grate velveeta so I just cut up little chunks and spread them around. You could also use cheddar or jack, but the velveeta gives this one a unique flavor.
