I am incapable of roasting a chicken without roasting 2 (when they are on sale). And, I cannot have chicken carcasses without making chicken broth with everything I need to throw out in the Vegetable bin. This is my Garbage Soup and it takes on many different faces.
This time I had a bunch of rich broth...I had added a whole butternut squash to cook/steam on top of everything, a HUGE carrot, a whole onion and the thick trunk from a bunch of broccoli. When the vegies were done, I took them out of the soup, strained the broth from the bones, defatted it and THEN:
Put the large stem of the broccoli, the meat from the Butternut Squash and the big carrot into the blender. Whirrrrrrr the devil out of it. Add enough broth to make it whir easily and add more to the consistency you like. Then I put in some leftover green Salsa...about 1.4 cup. Heated it up, served it with a dollop of nonfat sour cream, slivers of fresh arugula (or spinach) and some baked croutons.
WOW....it was fabulous! No added salt to the broth or the soup, no butter and no cream.
Now, can I have some icecream?
