Mel's Potato Soup

Benton, KY(Zone 7a)

This is my ultimate comfort food...here's the recipe..(or what passes for a recipe.....it's actually, just throw it all in a pot and cook)

Cut up 3 or 4 potatoes in decent chunks
Shred or dice a carrot
chop up onion to taste...depending on the state of my stomach at the time, amounts can vary by a wide margin

Put in saucepan and add at least 1 can of chicken broth...maybe 2, depending on the amount of veggies you need to cook.
Cook on medium till everything is falling apart and very soft
Mash with a potato masher or flat spoon till most of the potatoes are mushed up and just a few chunks remain.
Add some bacon crumbles, a handful of shedded cheese, a spoonful of sour cream, and a bit of milk to make consistancy to your liking. Salt and pepper to taste..(you use less salt if you wait till now) All of this stuff is optional, depending on what I have on hand and if I'm actually sick, or just want comfort food.
