I have a couple of cuttings that I was given that have rooted that are odd. Two of these cuttings (about 10 inches tall) were just stuck in water. They have roots on the bottom, then a stem with leaves coming out the side (under water), then above that more roots, above that another stem out the other side (also under water), and looks like more roots starting above that with leaves starting at the very top, so, do I cut these into three pieces each or what? I'd love to have additional starts to share, but don't want to kill these.

Sharon, I've had that happen to some of my cuttings. When I planted the cutting in soil, I covered as much of the new growth as possible then hilled the soil on the side that had roots. As the little shoots grew, I added more soil. I've read on other threads that it's OK to bury the new shoots as they will grow out of the soil when the are large enough. That works too. I'm glad your cuttings are doing well. I transplanted the little log of Lee Allen you gave me into a slightly larger pot.
