yummy sausage soup

Silver Lake, OH(Zone 5b)

Adapted from 30 Minute Meals by Rachael Ray.

Brown in olive oil some fresh Italian sausage - sweet or hot as you wish
add to it a large chopped onion
2 or 3 potatoes, chopped small
3 carrots, chopped small
1 can of great northern or canellini beans, with juice
1 large clove of garlic, chopped fine

Saute all together till sausage is cooked through.
While everything is really hot, add about 5 or 6 handfulls of fresh spinach (my hands are pretty small)on the top and let it wilt. Then pour over it 6 cups chicken broth. Be sure and stir up the browned stuff in the bottom of the pan to get the most flavor for your soup. Add s&p to taste.
I think perhaps an herb could also make this yummier - I'm thinking thyme or maybe rosemary.

Let it simmer till the beans become a little mushy. You might want to smash some of the beans into mush before adding them so the soup will be thicker.

Like most of Rachael's stuff, this cooks up in less than 30 minutes and tastes like you worked for hours. She served it with grilled smoked mozzarella cheese on paninni bread with tomatoes.
We just ate it with crackers.

Other dark greens can be added - kale or she used broccoli raab which I find disgusting (each to his own!)

This was delicious and would have also been good with some smoked mozzarella on top or stirred in after all was cooked.

DH gobbled it up.
