My Grandma's hickory nut cake

New Madison, OH(Zone 5a)

GrannyLois requested that I post this recipe after I made it. This was my grandma's hickory nut cake, made with Dave's grandpa's hickory nuts! They are absolutely wonderful nuts...so fresh and moist! I was quite pleased with them!
And the cake is wonderful too. :)

Here is the recipe.

1/2 cup shortening
2 1/2 cups granulated sugar
1 cup water
1 pinch salt
2 1/2 cups sifted cake flour
2 tsp. baking powder
1 tsp. vanilla extract
4 large egg whites

Cream together, sugar and shortening. Sift again, with the sifted cake flour the salt and baking powder. Add dry ingredients alternately with the water to the creamed sugar and shortening. Add vanilla.
Lightly fold the beaten egg whites into the batter. Fold in 1 cup of hickory nuts.
Bake in two 8 or 9" pans at 350 degrees for about 25-30 minutes..depending on your oven.
Cool and frost with your favorite buttercream frosting.

P.S. Yes..that is Dave as in Dave's garden!!
