Beef Fat

I have been told by many that beef fat is the best thing to cook french fried potatoes in the problem lies with there being no supplier (that I know of) that carries such an item . So I would have to make my own . Is it just a matter of collecting fat? Is the fat from all parts of the beef equal in taste etc? And then Do I just simply melt it ?
