Karaila Gosht
Bitter gourd in mutton
Ingredients:
1/2 kilogram bitter gourd, karaila
1/2 kilogram bhuna gosht ( fried meat)
3 medium onion skinned & thinly sliced
2 tablespoon coriander leaves, fresh
3 whole green chillies
3 medium tomatoes
1 teaspoon salt
. for deep frying oil
How to Cook:
1. Peel the bitter gourd, make a long cut in it, take out all the seeds and cut into thin slices. Sprinkle salt over it and put it aside for at least two hours. Rub the bitter gourd with your hands to remove the excessive bitterness. Wash the bitter gourd with plenty of water and squeeze to remove water.
2. Fry the onion slices in oil until the edges turn light brown in color. Remove the onions from the oil and keep aside.
3. Fry the bitter gourd pieces in the same oil until they turn golden brown. Remove from the oil and discard the oil.
3. Prepare the bhoona gosht. Add fried onions, bitter gourd to it. Cut the tomatoes into small pieces and add to the bitter gourd mixture. Mix well.
4. Cover the pot with lid and cook it over low heat until bitter gourd and onions become soft and tender. No need to put water but if it tends to stick to the bottom add 3 to 4 tbsp of water.
5. Add yogurt and cook for 4 to 5 minutes stirring all the time. When oil separate from the mixture take off from the heat.
6. Garnish it with coriander leaves.
This recipe serves 6 people.
Preparation Time: 20 minutes.
Cooking Time: 35 minutes.

Stuffed Karaila
Bitter Gourd
1. Peel of the bitter gourd, make a long cut in it and take out all the seeds.Sprinkle salt in and out of the bitter and put it aside for at least two hours. Wash the bitter gourd with plenty of water and rinse them softly.
2. Cook mince meat with one onion, one tomato,garlic, ginger, one tsp. red chilly powder and one tsp. salt.
3. Fill the mince meat in each bitter gourd, sew it with needle and thread. Deep fry them on medium heat until they turn golden.
4.Cook one onion, one tomato, one tsp. chilly powder, one tsp. salt and half cup of water. Cook it over low heat for ten to fifteen minutes or until the onion and tomato get soft. Mash it with the back of a wooden spoon to make gravy. Add one fourth cup oil in the gravy and cook from three to four minutes.
5. Put the fried bitter gourd in the gravy and cook for five minutes.
6. Garnish it with tomato, onion, Green chilly coriander
leaves.
Serve with Roti
Karaila Chanay Ki Dal
Bitter gourd with husked, split, black chickpea
Ingredients:
1/4 cup daal channa (gram lentils)
1/2 kilogram bitter gourd, karaila
. For Frying oil
2 cup onion sliced
1 teaspoon red chili powder
1/4 teaspoon turmeric (haldi)
1 teaspoon salt
1 teaspoon coriander powder
3 medium tomatoes, chopped
1/2 teaspoon khatai powder
3 whole green chillies
How to Cook:
1. Wash dal in few changes of water, until water runs clear, then keep aside to soak in cold water for about an hour. Drain and boil dal with 2 cups water, until 34 cooked and about 12 cup water is left. Keep aside.
2. Peel the bitter gourd, make a long cut, remove the seeds and cut it into thin slices. Sprinkle the bitter gourd with salt and put it aside for at least two hours. Rub the bitter gourd with your hands to remove the excessive bitterness. Wash with plenty of water and squeeze to remove excess water.
3. Fry 112 cups onion slices in oil until the edges turn light brown. Remove the onions from the oil with a slotted spoon and keep aside.
4. Fry the bitter gourd pieces in the same oil until they turn golden brown. Remove from the oil and discard the oil.
5. Heat 12 cup oil in a heavy based skillet. Add the 12 cup onions and stirring frequently, sauté until transparent but not brown about 3 minutes.
6. Add chili powder, turmeric, salt, coriander powder and a little water to prevent the mixture from sticking to the bottom of the pan. Stirring frequently, fry the mixture for few more minutes.
7. Add tomatoes and still stirring frequently, fry mixture, until the tomatoes are soft, about 5 minutes. Add a little water, if necessary, to prevent the mixture from sticking to the bottom of the pan.
8. Add dal with water, mango powder, green chillies, fried onions and fried bitter gourd to the tomato mixture. Mix well, reduce the heat, cover and allow to cook for about 15- 20 minutes or until the bitter gourd is tender and all the moisture had dried up.
9. Serve with Roti or plain boiled rice.
This recipe serves 8 people.
Preparation Time: 20 minutes.
Cooking Time: 30 minutes.
