Trying to Lower Carbs

Decatur, GA(Zone 7a)

My dh is half Italian (dad's side) and has grown up all his life "knowing" that one must have either pasta, potatoes, or rice at every meal. He's also a great cook. Consequently, at age 54, he tops 400 lbs. I made him (and I do mean made) him go to the doctors this past summer, hoping that he would come back with "doctor's orders" about losing weight. Nope - his BP is low, sugar is normal, stress test for heart is wonderful, etc. I do know he could drop dead of a heart attack any minute, as is often the case, even though "nothing" is wrong.

All that to say, I really do want him to lose weight, as he huffs and puffs with the least if physical effort. To that end, (finally getting to the point here), I intend to take over more of the cooking and I want to do my best to reduce the carbs and fat, but still have good tasting food. I've tried this before, and after a few days he insists on cooking himself and we're back to spaghetti, rice dishes, and tons of potatoes. Plus, bread at every meal.

What are some veggies or dishes that are good, but also satisfy that carb tooth? I love spaghetti squash, but just know how to micowave them. He'll eat that once a month or so. Anywhere I can go, or do you have some recipes I can try? I really think that once he loses a few pounds he'll see the difference and want to go on.
