Lemon Loaf ( Mornin_Gayle )

(Zone 1)

Ingredients:

• 3/4 cup (175 mL) butter, softened

• 1-1/2 cups (375 mL) granulated sugar

• 3 eggs

• 2 Lemons (Grated Lemon Rind And Juice Of Both )

• 2-1/4 cups (550 mL) all-purpose flour

• 1-1/2 tsp (7 mL) baking powder

• 1/2 tsp (2 mL) salt

• 3/4 cup (175 mL) milk

Preparation

In bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time. Beat in the rind from the two lemons. Add lemon juice from the lemons. In separate bowl, whisk together flour, baking powder and salt; stir into butter mixture alternately with milk, making 3 additions of dry ingredients and 2 of milk.
Grease 9- x 5-inch (2 L) loaf pan; line bottom with waxed or parchment paper. Set aside.

Pour into prepared pan. Bake in centre of 325°F (160°C) oven for about 1 hour and 20 minutes or until tester inserted in centre comes out clean. Place pan on rack.

There are many variations on creating a topping for the Lemon Loaf. You can sprinkle sugar on top of the loaf before putting it in the oven to give it a crusty hard sugar coating. Or you can mix about 2 TBSP of Lemon Juice with 2 TBSP of Sugar. Microwave for 1 minute and simply pour it over the top of the uncooked loaf. This will give it a sweet lemony coating after it has cooked. Or You can use icing sugar after it has cooked and cooled.

You may use the rind and Juice of only one Lemon for a much lighter lemon flavoured loaf. I prefer 2 because I like my lemon loaf to have a real strong Lemony flavour.
