Okay - I've done web searches & e-mailed companies, yet still can't seem to get an answer as to how long cured country ham can be safely kept in the fridge.
Since my husband doesn't eat any red meat products, I don't normally buy ham products. But once the cold weather sets in, I sometimes like having ham & eggs for breakfast myself. Since I really like the real country-cured salty VA hams, I usually buy packets of the small "biscuit-cut" slices or trimmings sold in small vacuum-sealed packages, since that works best for single servings.
Does anyone here have any idea what the fridge life is for this? Once I open the vacuum packaging, I normally rewrap the package in Saran Wrap, & then seal that in a Ziplog bag in the meat compartment of the fridge. I don't have ham & eggs every day, & find myself frequently tossing the ham out after a week or so.
Am I being wasteful or prudent?
